I think it's probably... ... part of the attraction is not having to answer to anyone, being your own boss. It was a profitable profession to be in because, don't forget, then the years, there was no VAT. Wherever you went in this set up cafe or restaurant, it would be busy. And I remember my brothers getting in a car and driving from A to B, going street by street, whole day looking for possible locations.
