What Is Wild Rice?

Wild rice is often called kodai mai or ancient rice. It's not usually used for making sake, but the presence of tannins in wild rice allows brewers who choose to work with these types of grains to get an outcome that looks like a rosé. When the tannins are exposed to light over time, they give off this natural pinky red color. But it's really unique and not something you're going to see every brewery using.
