How to Get the Skins Back Into the Wine Cellar

The interface between the wine and the skins is much smaller. So how do we get them back into the mix? Well, we could either do the pump over deal or we could stand on top of it and punch it down,. I devised this sort of plunger type of mechanism, t on a pole, sort of like a toilet plunger, really, except made of yd luminum. And i you'd stand on topof te on a cat walkand in my case, and punched down, push skins down into the liquid. It tended to give the wines a lot of flavor without increasing the tannon.
