As these coffee seeds are being heated up, all the different kinds of molecules, which there's tons, including water, sugar, protein, proteins. And we get all kinds of things start happening, like polmers can start being formed with the myard reaction,. The tastiest reaction is where sugar and proteins are turning into creating this olimer.
