Mapping is the relation between choice and welfare. Faylor and Sunstein use an example of choosing a flavor of ice cream in one of their papers on choice architecture. The mapping from choice to outcome, your welfare, as Thaler and Sunstein call it, is much more difficult to see in this case. It's the task of any choice architect to set up a system that helps make the map as clear possible so the chooser can select the options that are best for them.
