What's the Difference Between Single Vineyards and Langonebiolo?
Most of the Langonebiolo is fermented in concrete, while Barbaresco and single vineyards are fermented in stainless steel with automatic temperature control. All the wines spend extensive time on skins, 20 days to 30 days. We don't mind that we like to extract as much as possible. The soft anions, the harsh anions, we don't care. We want to get everything. They may require a few extra years to open up, but we rather have everything in and then give the wine some time to open up.
