I love anchor you know anchor steam it's one of my favorite beers and it's open for minted as well now you mentioned oxidation there's a reason we call it cold side oxidation it's because you're not doing anything by adding oxygen to fermented beer the yeast are already done they don't need that oxygen anymore but that you you kind of ride that fine line with open fermentation like I don't know do you cap it towards the end of fermentation?
