I saw a documentary, I think, about syrup. Who was going to like turn their homestead into a syrup processing facility because they had a bunch of great trees for it? And it's just something I've never even come close to doing. So you're basically harnessing capillary action. When it freezes at night and it's above freezing during the day, it's like a pump. It pumps that sap up from the roots, up through the tree.
