Is That Really One of the Biggest Issues?

20 years ago, even the advent of when French chefs started coming to America to open up restaurants. The information gap is not there anymore. Even for me, if I wanted to open a momofuku today, I don't know if it would work. There's no way I could pull the balsam that I cooked in 2006 into an Asian dish today.
