The Role of Albumin in Eggs
The egg white contains active antimicrobials called lysazime. It was discovered by Alexander Fleming, better known for coming across penicillin. The yoke has all the nutrients that baby chick needs to develop into a full-grown bird. There are four different kinds of albumin, some more watery and others viscous.
