On iOS, if you choose a viewfinder aspect ratio other than four by three, the new ratio is kept as the default when cropping those photos with freeform still the four by three shots. If you open that picture in photos on the phone or photos on the Mac and presumably the iPad as well, it won't be freeform. I guess it considers it like, oh, you've kind of already cropped it because it takes the whole picture from square to rectangular. That doesn't help me at all either but it just goes to show that this is a more complicated situation than you might think.
