Renee Renzep has made headlines with his decision to close his restaurant and do something different. He's quoted as saying, this is simply too hard. My thoughts are that I would much rather young chefs are taught the basics of cooking. So instead of being able to do some of the very molecular dishes, I think they should be able to fill it a fish, butcher a pig, make a loaf of sourdough. This is where we are de-skilling the industry.
