I Don't Know About Restaurants
In some ways, I feel like we're going back to New York in the mid 90s in terms of the aesthetics and where we want food to be. There's as much virtue signaling in food and art and TV and movies as there probably was bad abstraction for 20 or 30 years. Dolly Parton moved into a dead genre virtually and made it new again. That's what I'm saying about Cottalon. You bring ideas together and do weird things, hybridize them. And I have to buy my tongue because I'm not the artist here. I'm just a fan, but I almost want to help produce as well!
