The Strangest Wine I've Ever Tasted

A new microbe came on the scene and metabolized some of that texture. It ended up going away. I don't know if something else in the aging process, we didn't have sulfur in the wine. There was something else. But one of our Chardonnay barrels in a lot went ropey. None of the other barrels did. And it was the strangest, strangest wine I've ever tasted in my life. If you haven't added sulfur, mouse will ultimately age away.
