If you keep looking around long enough, you should capture a star at basically every stage of its life cycle. You'll see black holes forming, yu'll see supernovas at all different stages. And on top of that experimental evidence, we also have a model for how stars form. So the story sort of all hangs together. There's no little bits of it that are circumstantial.
