The GraphQL versioning is built in. It's because the schema, the Schema in perspective itself is the version. You can probably dodge a lot of the issues if you like actually follow semantic versioning rules. And there's something I've always wanted to try was header based versioning. So basically that they allow clients to send like in the header, like a request, this is like the API version we expect.
