I always bought pre-milled whole grain stone ground flour. I used to go fairly regularly and just buy a few kilos at a time so that I could get it as fresh as possible. My rule was about a month maximum, but depending on the season, I would let things store for longer in winter here because it's cooler and drier. And do you use your home ground flour as to your fresh or starter and if you do, which I'm guessing you do. Do you grind just a tiny bit at a time to do that?
