The Fundamental Choice in Tomato Sauce

There's a big debate for example. And margarita pizza traditionally involves basil. Well but if you put basil on a pizza that's going into a very hot oven you will burn the leafy basil. In Italy they mostly take their tomatoes right out of a can and they don't cook a sauce. They just they might macerate the tomatoes, they might drain them. So there are two schools of thought. There is the hide the basil under the cheese school of thought. Or there is the sprinkling on afterwards. I like the Sprinkling on afterwards because the basil really is better fresh.
