Next week's episode is going to be an episode about foraging yeast. Jordan will go out into a forest and find Yeast in the wild. He says it takes hundreds of thousands of trials before yeasts are found that brewers would want to brew with. The genetic modifications are very targeted versus this discovery phase, he says. But at what point are those hybridizations also genetically engineered and genetically modified? "I'm not an expert in these things but I gather that it's really challenging"
