Don't write it down. Reading something is o very different skill then saying something. Recording yourself making that conversation, saying certain things will give you an objective view as to what you're do. Use your phone to keep track of your vocabulary. Pared with the notion of trying to get the language right and the flow right, i really think giving people outlines, rather than word for word makes a big difference.
