I'd been out of restaurants at this stage four or five years and I wasn't up to it anymore. The opportunity came up to run my own kitchen somewhere else so I go across, working in a other kitchen. It's going great but then about three weeks or a month later it all started to become quite pedestrian what I was doing in this other kitchen. "La Cantina" is based on the concept of La Cantina: A restaurant that serves food from around the world with an international twist.
