Can I Be Extremely Controversial?
When you start cooking professionally, I think you are shocked by the amount of acid and salt and fat that goes into food. It kills your palate to a point where it deadens it to the point where you have to learn how to add more than you normally thought was possible. And there is actually a weird trajectory that many of the great chefs of the world were all former cigarette smokers in their early formative years as a cook.
