One of my favourite cheeses is a cheese that we actually study a lot in my lap. We're really trying to understand how a microbo community is organized. What i would love to be able to do is figure out how all these microbes are communicating with each other. Do we know how it might interect with our own microbiom all the cheese yoere eating?
