How to Predict Malting and Maltenalysis
Attenuation is one of the hardest things for a, a malt stosh to predict. The sheer number of different mashes that are used gives you different carbohydrate spectra. Sometimes we're not going to send something that's under modified so you don't have as much fermentable sugar and send something that’s over modified. Most of these do not suffer from premature yeast flocculation issues. But we have to be very careful when we do are working with a brewer that uses one of those beasts.
