I've gotten much, much better at it as the years have gone by. The restaurant business does feel family-ish to people because you spend so many damn hours working with each other but it's not a family. When you fire somebody from the family, also known as your restaurant, you have to ask yourself what will this do to the fabric of that group? So I was able to come up with an action point and a time frame for each one of those.
