Christmas Coffees - The Christmas Coffee Cycle

Last year we ended up with some bags that were a little bit woody. The fats in the raw coffee like the unroasted, they start to oxidize. Mainly due to high moisture or poor drying, poor storage or just age. So throughout the kind of Christmas coffee cycle now we started with maybe the very best one. It's marginally better maybe like point higher in score. And now we have the last one which tastes very similar to the middle one.
