The Importance of Creativity in the Kitchen
I think that being able to see a dish in your head and create based on within the confinements of a situation like that, the timing, the stress, the cameras. I think it takes a very specific type of brain. There are a lot of incredibly talented chefs who I know who don't work well under those conditions. You know, how a dish unfolds in that environment has to do with split second decisions and seeing through a journey that happens in your head first and committing to it.
