The Rise and Fall of Tofu

Tofu in the US really starts taking off in the 80s and the 90s, but you give us sort of a prehistory of that Tofu going mainstream. It began this kind of seeding venture that built on the backs of this other food movement that had started to spread. The way that food had become politicized through the civil rights movement and through the back to the land movement and environmentalism made it possible for Tofu to emerge.
