Soy lecithin is used as an emulsifier in a lot of low-sugar candy bars. Soy lethas and sunflower lecitin can also be found on food labels, but they're not actually seed oils. The oil was first made edible by industrial waste from the 1800s. It's now considered one of the world's leading vegetable oils.
