How to Create a Notebook for Projects

I have a personal project slash small folder and a project slash professional folder. And then I use the, obviously I use the Outlook plugin for working else to do that. Because I find that when I travel, the easiest way for me to find something is in Evernote not an email. It's just staying up soon to be as good.
