Polytheists are less constrained by many gods at least or less constrained by space and time than we are. It does sometimes happen that people who are working with one day and he will have an unexpected encounter with another in fact it happens all the time. polytheists quite routinely do is simply acknowledge that there are always going to be many many gods with whom you personally will not interact just as in a city full of people there will be plenty of people you never meet.
