The Different Styles of Fried Chicken

American fried chicken especially isn't a monolith, right? No, it's not. You get so many different varieties and flavors, different techniques. So for me, my first reaction is like Southern Louisiana style fried chicken. I don't love Nashville hot chicken only compared to all the other styles of fried chicken. Because to me, there's no acid in it. It's too much fat, not enough acid.
