The wild ancestor to maize is a plant called Teosenthe and it mazes domesticated probably around 8,000 or so years ago. It's the most difficult grain for the human body to fully digest plant And and release the nutrients. Millions of people have gotten sick from pylogra and niacin deficiency because they weren't processing this maize properly. So we're having these silly conversations up here about genetically modifying something But we're not even making the most use of the of the maize that we have.
Bill Schindler may be most well-known for his role in the National Geographic series, The Great Human Race, where he and survival expert Cat Bigney lived as our most primitive ancestors did. He now owns a restaurant and store called The Modern Stone Age Kitchen, where he cooks amazing quality food and hosts events to inspire others to learn the art of cooking. He has also written a book called Eat Like a Human, which dives into our ancestral way of eating and what Bill believes to be the species-appropriate diet for humans.
In our conversation with Bill we cover a ton of ground. We talked about his journies through Africa with his family visiting different tribes, exploring different cuisines, learning to cook your meals, the significance of meat as the cornerstone of the human diet, and which “healthy” foods to avoid.
