Soy is a valuable source of protein and we are now growing it on scales never seen before in human history to feed it to pigs, to chickens. I could have written a book which was just full of wonder and lovely photos, and it would have be agreat coffee table book of describing some of these obscure foods that will never get to eat. But i wanted to make the case because i knew from meeting many of these farmers that they were convinced that these foods just didn't belong to the past. They were part of our future.
