It takes a long time for a yeast genome to actually like mutate um and evolve because yeast aren't reproducing sexually in your beer they're reproducing asexually. They're budding and making copies of themselves and then dying off so i just want to be very clear about that that's not happening but then you have this really fast targeted crisper that's the new technology crisper cast nine. It's actually going in and altering genes, which is how poth negative stuff can happen.
