How to Organize Note Taking During Interviews

How would you organize note taking during interviews? Should each stakeholder write down what they found individually? In my previous job, all stakeholders collectively took notes on a mirror board. While this process saved a lot of time, I always felt some details were missing,. But maybe I just had a hard time giving control over to the stakeholders for capturing everything. My detail oriented and perfectionistic working style is getting in my way to work more efficiently.
