Don't You Need Soil to Grow Lettuce?

Bowery lettuce tastes absolutely delicious. We did a side by side taste it, blind tasting at the office and you guys killed it. Because we went so med er. But i have a very sort of straightforward and simple question,. like, don't you need soil to grow lettuce that tastes that good? Is it representing the best possible climate and using technology, is that over simplification of what you're doing in that regard?
