Originally fish fryers used the cheapest possible fish, often stuff that fishmongers hadn't managed to sell during the day before. Mayhew said that one of his sources said that a gin drinking neighborhood is the best for selling fried fish because quote people haven't their smell so correct there. But Barton said that what's now considered the traditional fish for fish and chips is cod. So how did cod take over from all those leftover fish of days past?
