Armburg: Greenhouse versus natural herbs is a big challenge. He says we can taste the difference between a strawberry or a tomato, but very few of us have that sophisticated enough understanding of different quality herbs to be able to taste echinacea grown in a bio diverse meadow. "I feel like that's a big challenge," he says.
