Noma has reinvented itself multiple times and of course that was my first thought when they came to me about this story. Renee Rizepi is a person who embraces change, always has and of course has always embraced making those changes very publicly. In Denmark there is a strong culture of not sticking your head out and saying that the nail that sticks out gets hit by the hammer. So he's always been very controversial within Denmark but you cannot argue that this style of food originated with this new Nordic manifesto from 2004.
