There's a lack of vitalism I think in science, that's why Nietzsche thinks that truth is not the sole important value in philosophy. The issue here is where you find yourself locating the truth, and how much self-sacrifice you're willing to impose on yourself in order to achieve it. A lot of modern science locates the underlying nature of reality in realms which transcend the one that is open to our everyday senses. That's taking it away from the immediate empirical world of becoming. His slogan for this is to say that asceticism prioritizes being over becoming.
