You're the Best Restaurant in Australia?
When I came out to Australia in the 90s, I didn't really see anything. There was a general distaste generally about native ingredients. You know, Aboriginal people, they're hunter-gatherers, the echos are hungry. That was what I got told. After a year of being in Australia, I thought, it just can't be right. And so when I immigrated, I'm going to investigate that. And so I started using these native ingredients. I put them in a menu and we got horrific review. It's like a harkback to bush tucker cuisine, it's rubbish, you know?
