Why Processed Foods Love Saturated Fats

Process food manufacturers want to make products that will last at room temperature, wrapped in plastic for months or even years. Fat is a source of moist texture that is not hospitable to microbial life, unlike water. Animal fats are usually very high saturated fats. Plant oils usually are not. This can create off flavors in food.
