You can braise your dishes. And that's one way to start off with a foundation of flavor. You can use mushrooms fresh and compress them in a pan, sear them till they get crispy on the edges,. Use dried mushrooms and grind them into a powder and use that as a seasoning for lots of umami pop. One of my favorite things is to roast plums and peaches and apricots. They're incredibly sweet. More than you might realize, people like to say that salt and sugar and so forth, brings that olive oil, brings out the flavor of dishes.
