The Importance of Taste and Delishness
In Oaxaca, the grasshoppers are parboiled and toasted on a komal with garlic and salt. "If you eat chapulines, you will always come back to Oaxaca," is a saying in the city where we lived. A really fundamental part of flavor and deliciousness is smell; most mammals do most of their smelling outside of their nose. And so that sweet, it's salty, it's bitter, it's umami -- those aspects of deliciousness are pretty hardwired.
