The Importance of Course Corrections in Baking

Baking is like firing an artillery piece. You have had your last say in the matter once you've pulled the trigger. A baking recipe and a cooking recipe that I'm developing may each require a dozen course corrections. With a baking recipe, 12 course corrections means there will be 12 different cakes in my house that day - most of them will be bad.
