How to Prevent E. Coli From Getting Into Beef
E. coli 0157 was found in around 28% of cows, and that number has probably jumped since this book was written. During the slaughtering process, if a cow's colon is cut, that E. coli that's in the gut can then escape. The infectious dose for E. coli is like as little as 10 organisms. But how do you make sure it doesn't happen? That's a much trickier issue.
