In a big restaurant, you have six people working on island, at minimum. You can be shoulder to shoulder with another person around an island. So if we were doing a 40 seat restaurant, Chris, it's quite possible there would just be two of us. And that's what Pascal Babot has at Lufthans, which is a three-mission restaurant,.
