Smoked Ducks - I'm Seeing a Renaissance

i'm thinking you're going to see a renaissance of not peking duck in the traditional sense, but smoke ducks. Treat it like a steak, salt and pepper, or a momo savor salt and just grill it. I would broil it as well. It's very, very good. Another i wanted give aaa quick shot out to a smoke queen. There was a pop up. She did these beautiful peaking ducks that were smoked with the momo team,. The major domo team, excused me, with jude and the whole major Domo team. And they did smoke ducks. You can probably put in a hundred, forty hundred, 80 degree a smoker
