I just think there's such an abundance of plant-based foods in this cuisine, like so much more than I knew about previously. You have a wide variety of Like vegetables and herbs and seasonings, and also regional cuisines and cooking styles. Just learning about this cuisine made me want to just, I was just obsessed with learning more because it feels like endless. And I haven't even touched upon all the regional differences too in cooking vegetables. It's really an exciting color in your world to explore," she says.
